Cilantro Lime Pork Loin Roast
Reheating Instructions:

Preheat oven to 350 degrees

Remove the pork roast from refrigeration 10-20 minutes before you begin to cook to allow the roast to come to room temp

Meanwhile, remove the potatoes from the vacuum sealed bag and place on a cookie sheet

HINT: for an easy clean up line the cookie sheet with parchment paper

Place the potatoes into the oven, once the oven has come to room temperature, and cook for 25-35 minutes

Make sure to stir potatoes half way through so they don't stick to the pan

Remove the pork from the vacuum sealed bag and place the compound button over the pork roast

Cover the pork with foil

15 minutes into reheating the potatoes, place pan with the pork into the oven

Reheat the pork loin for 15-20 minutes then remove the foil and finish the pork roast for another 5 minutes making sure to baste with the melted compound butter

HINT: use a spoon to pour the melted butter over the pork roast before finishing it in the oven

Remove the pork roast and potatoes from the oven

Remove the pork from the pan and let rest for at least 5-7 minutes on a cutting board before slicing

Top the pork roast with the chimichurri sauce or serve it on the side
